Carrot Mundri Payasam
A tasty carrot cashew dessert, It is one of our favorite desserts at home. Kids will love it. It is rich in vitamins and minerals and quite healthy for children.
Ingredients:
Full cream milk 1 litre
carrot 2 cups , grated
Cashewnuts 1 cup
Cardamom powder 1/2 tsp
Sugar 3/4 cup
Ghee 5 tblsps
Method:
1.Soak cashew in water for 1/2 hr;blend coarsely and set aside
2. Heat the milk over medium flame till it thickens a little
3. Add the sugar and stir until dissolves
4. Steam the carrot in 1/2 a cup of water until soft and add to the boiling milk
5. Add cashew paste,cardamom powder and boil for 4-5 mins
6. Add the ghee and stir for a min and remove from fire
Tip: U can add condensed milk to the thickened milk;it is quicker and tastier. Then u should reduce the sugar content.
Serve chilled.
