Pav Bhaji



Bhaji


Ingredients:


3 cups mixed vegetables (carrot, cauliflower, beans, peas)

3 big potatoes

3 big onions, chopped small

3 medium tomatoes, chopped

1 tsp garlic paste

1 tsp ginger paste

2 tbsp oil

1/2 tsp turmeric powder

1 tsp Kashmiri chilli powder (adjust to taste)

1 1/2 tsp coriander powder

1 1/2 tsp cumin powder

1 tsp garam masala

salt to taste

2 lemons

3 to 4 tbsp chopped fresh coriander

2 to 3 tbsp salted butter, softened



Method:


Steam cook the mixed vegetables and the potatoes till well done. Mash them very well and keep aside.

In a largish wok, heat the oil. Add the ginger and garlic pastes and sauté taking care to see it doesn’t burn. Add half the onions and sauté again it is soft and translucent. Add the chopped tomatoes and cook them till they’re soft and mushy.
Use your potato masher, or a wooden spoon, to mash the onion-tomato mixture further. Cook until the oil appears on the edge.

Add the turmeric, chilli, coriander, cumin and garam masala powders. Cook over medium heat for a couple of minutes, stirring often, until the raw smell of the spices disappears. Add the mashed vegetables, salt and about half a cup of water. Cook for another 5 to 10 minutes until everything blends into a homogenous thick gravy-like consistency, adding a little more water, if necessary.
Add the chopped coriander and a couple of tbsps of butter, mix and serve hot.
Serve with pav buns.

Dabeli

Our kids love it.





Ingredients:

Dabeli Masala Powder:

1tbsp of Coriander seeds
1/2 tsp of Cumin Seeds (Jeera)
2 Red chilies
1/2 inch cinnamon Stick
2 cloves

Roast the above ingredients and make it like a powder in a blender. Keep it aside this is used in the filling.

Filling:

2 Potatoes boiled and mashed potatoes
1 small onion chopped finely
1/2tsp of cumin seeds
2tbsp roasted peanuts
Pinch of hing (asafetida powder)
1tsp oil
Little bit butter to roast the buns.
Green Chutney
Tamarind, Date chutney
3 tbsp of pomegranate seeds (Optional)
Sev for garnishing.

Preparation:

Heat a pan. Once the pan is hot add oil, cumin seeds, hing. Once the cumin seeds are turned golden color add chopped onions. Once the onions turned little golden color add the Dabeli Masala. Keep frying the onions in masala for 2 more mts; add the mashed potatoes, chooped coriander and salt. Keep it for 5-6 mts and turn off the heat.

Now take a pav/bun. Cut in a 3/4 so that the filling stays in the bun. Spread 1 tsp of coriander/green chutney, chopped onions, 1tbsp of potato filling/curry, 1tsp of tamarind-date chutney,5-6 peanuts.

Prepare all the buns the way it is explained above. Heat a pan and add little butter and roast the buns in butter for 1-2 mts and turn off the heat. Garnish the buns with Sev and pomegranate seeds.

Bhel Puri

Ingredients:
• 100 gm Puffed Rice
• ¼ cup Boiled Potatoes (peeled and coarsely chopped)
• 50 gm Tamarind
• 50 gm Jaggery
50 gm Sev
• 1 Bunch Mint Leaves
• 1/2 tsp Chat Masala
• 1 Bunch Coriander Leaves
• 3 Green Chilies
• Salt to taste

Method:

• Boil the jaggery and tamarind in a cup of hot water until the mixture thickens slightly. Keep it aside

. • Mix the green chilies and mint leaves. Grind to a smooth paste. Keep it aside.

• Take the chopped potatoes in a bowl and toss it with chaat masala and salt. Keep it aside.

• Put the puffed rice in a large bowl and add mint leaves paste.

• Add chopped onions, tamarind water, sev, green chilies potatoes and mix well.

• Garnish with coriander leaves.

• Bhel Puri is ready to serve.

Vada Pav



Ingredients:

• 4 Boiled Potatoes
2 Cups besan
• 2 Garlic flakes
• 1 Ginger
• 2 Chopped onions
• 1 tsp Cumin seeds
• 1 tsp Turmeric powder
• 1 Cup coriander
• Salt to taste
• Oil for deep frying

Method:

Add turmeric powder, salt to besan and make a mixture.
• Add water to the mixture and make batter of medium consistency.
• Peel the potatoes and mash it by hand.
• Make a paste of garlic and ginger.
• Add garlic ginger paste,coriander to mashed potato.
• Make small balls of mashed potato mixture.
• Heat the oil. Dip each ball in the batter and fry the balls till they turn golden brown.
• Split the pav keeping the base intact.
• Place the vada into it. Vada Paav is ready.

Aloo Tikki

Aloo tikki
Ingredients:
• 3-4 Potatoes (boiled)
• 3 Green Chilies (chopped)
• 1/2 tsp Red Chili Powder
• 5-6 twigs Coriander Leaves (chopped)
• Salt to taste • A pinch of Asafoetida
• Oil to fry
How to make Aloo Ki Tikki:
• Peel the boiled potatoes and mash them while still warm. • Add green chilies, coriander leaves, salt, asafoetida and red chili powder to it and mix well. • Divide the mixture into 10-12 portions, shape them into round tikkis and flatten them a bit. • Now heat a tawa and shallow fry the tikkis in oil on both sides, till golden. Drain onto an absorbent paper. • Aloo ki Tikki is ready to serve. Serve with sweet/ pudina chutney.

• 1/2 Cup boiled green peas
• 1/2 Capsicums
• 2 Large chopped onions
• 1 Large chopped tomato
• 2 tbsps garlic
• 5 tbsps butter
• Salt to taste
• 4 Paavs
How to make Paav Bhaji:
• Cut all the vegetables into small pieces.
• Fry onions in melted butter
. • Add vegetables and garlic and mix it well.
• Cook it till it turns tender.
• Add butter and cook it for 5 minutes.
• Place the Paavs on heated tawa and add spread butter on it.
• Cook it till it turns brown.
• Hot Pao Bhaji is ready.

Chaat Bander



These are some of the chaat items that i have tried out fir quite some time and got good results . Tought I will share them with u all. Hope u all try out and post ur valuable comments .
Sev puri
Ingredients:

• 2 Cups rava
• 100 gms Sev
• 1/2 Cup curd
• 1 Cup boiled potatoes
• 1/2 Cup chopped onion
• 1 tsp Chat masala
• 1 tsp Chilli powder
• 1 tsp Cumin powder
• 4 tbsp Tamarind chutney
• 2 tbsp Green chutney
• 1 Cup water
• Salt to taste

How to make Sev Puri:

• Cut boiled potaoes into cubes
• Mix rava, salt and water.
• Knead it to make dough.
• Keep it in a wet cloth for 20 minutes.
• Make medium sized balls from this dough.
• Cut small puris from the balls with it a cutter.
• Heat the oil.Fry the pooris till they turn light brown and crisp. • Place them on a plate.
• Put sev, cubed potatoes, and curd.
• Add tamarind and green chutney.
• Sprinkle chilli, cumin and chat powder.
• Sev Puri is ready.
