Peanut Bars- A healthy snack



Try this great energy boosting snack any time of day. And it only takes 10 minutes to prepare. Enjoy! Kids will for sure enjoy this. It can be taken during breakfast too.

Prep and Cook Time: 10 minutes

Ingredients:
1 cup raw or roasted peanuts
1 Tbsp minced fresh ginger
2 Tbsp sesame seedsItill)
1 cup raisins
2 Tbsp honey

Directions:
Grind all ingredients, except for the honey, in a food processor/dry mixer until fairly fine but still having some texture (you don't want it to have the consistency of peanut butter).
Add honey and process just long enough for it to blend in.
Press into a square about 3/4-inch thick on a plate or square pan and refrigerate for about an hour or more.
Cut into 2-inch squares.

Makes 8-12 bars

Verkadalai Sundal - Groundnut Sundal




It is another lip-smacking evening snack , which can be made with no big effort and as all the variries of sundal , rich in proteins. It is for sure a big hit among kids. try it. and u will believe me. Ingredients:
Groundnut / Peanut - 1 cup
Grated Coconut - 3 tbsp
Salt - 1 tsp
Mustard Seeds - 1/2 tsp
Urad Dhal - 1/2 tsp
Dry Red Chilly - 2
Curry Leaves - few
Asafetida - a pinch
Oil - 1 tsp
Method:
Clean and wash the nuts and pressure cook them in water. Decant excess water and set aside. Heat up the oil and fry the mustard seeds, urad dhal and asafetida. Add the curry leaves and coconut and stir for a minute.
Mix in the cooked peanuts and salt and stir well for a few minutes. Serve hot.
You can substitute the dry red chilli with 2 green chilies and a fresh piece of ginger root, minced and added along with the curry leaves.
