Potato brinjal stir fry



Ingredients:

brinjal small - 3
potato (boiled)- 2
coriander powder - 2 tsp
turmeric powder - 1/4 tsp
red chilli powder - 1 tsp
mustards seeds
oil
salt

Method:

Heat the oil and add the mustard seeds. Once they have spluttered, add the potato cubes and brinjal slices and all the spices and cook tilll done.

Vegetable puff - The Vahchef way

Ingredients:

potato boiled and smashed
, peas, carrot
1 tsp chaat masala
1 bunch coriander chopped
1 tsp coriander powder
1 tsp cumin pdr
1 tsp ginger garlic paste
1 small lemon
1 tsp oil
puff pastry sheets
1 tsp red chili pdr
salt
1 tsp turmeric pdr

Method:



Take all type of vegetables cut into small pieces boil till bit and keep it a side. take a Pan add oil to it then add cumin seeds,turmeric,ginger garlic paste,salt,red chillie powder,saute them then add all vegetables,corainder powder,coriander leaves mix them then add chaat masala,lastly add lemon juice mix well once it is done transfer it to a plate let it cool down.Take Puff Sheets make it into different shapes add stuffing into it, add little water to the edges and close the puff keep it in the fridge for 5 min. Pre heat the oven at 450fand keep it for 10 min.

Stuffed capsicum

Ingredients:

Capsicum - 2

For stuffing:

2 medium potatoes,boiled
1/4 cup fresh/frozen green peas
2 tbsp chopped fresh coriander
1 small onion,finely chopped
1/2 tsp red chilli powder
1/2 tsp jeera powder
1/2 tsp garam masala
1/2 tsp kasuri methi
salt to taste
1 tsp oil

Method:
  • Peel the skins of boiled(we microwave them) potatoes and grate it or mash it properly.
  • Heat oil in a pan and crackle jeera, finely chopped onions and fry until light brown in color.
  • Add mashed potatoes and peas(soak them if they are the dry kind) and fry until the mixture is well mixed.
  • Add red chilli powder,jeera powder,garam masala,kasuri methi(crush them with hand to bring out the flavour),salt to taste.Fry for a minute and switch off the flame.
  • Add finely chopped coriander to it and garnish.
  • Stuff this into the capsicum which is already deseeded and saute in a pan with some oil. You can also  broil the stuffed capsicum in the oven. works fine.

Tofu sandwich



Got this recipe from Priya's Easy N Tasty Recipes from her extensive collection of sandwiches.


Ingredients:

2nos Potatoes (pressure cooked & mashed)
1/2cup Frozen green peas
1/2cup Grated firm tofu
1no Onion (chopped)
2nos Garlic cloves(crushed)
1/2tsp Fennel seed powder
1/4tsp Cumin seeds
2nos Green chillies (chopped)
1tbsp Coriander leaves (chopped)
Salt
Oil
8nos Bread slices







Method:


Heat enough oil and fry the cumin seeds, add immediately the chopped onions,chopped chillies and crushed garlic cloves.
saute everything well until the onions turns transculent,now add the grated tofu and frozen peas with fennel seed powder.
cook everything well in simmer with enough salt.once the peas get half cooked, add the mashed potatoes and mix very.
cook again everything in simmer until the veggies get well cooked, finally add the coriander leaves and put off the stove
Make the sandwich in the sandwich maker or on tava.

Patata Bravas

Hola Amigos!

Patata bravas is a traditional tapas recipe. Each household has their own recipe and finds them the best. kids sure will love this recipe needless to say about adults. Tapas means a variety of appetizers or snacks in the Spanish cuisine. It is usually served to encourage conversation among people who otherwise will be busy eating a whole meal. Ingredients:

  • 3 bsp of olive oil
  • 4 large Russet potatoes, peeled, and cut into wedges
  • 2 tbsp minced onion
  • 2 cloves garlic, minced
  • Salt and freshly ground black pepper
  • 1 1/2 tablespoons Spanish paprika
  • 1/4 tsp Tabasco Sauce
  • 1/4 tsp ground thyme
  • 1/2 cup (4 fl. oz) Ketchup
  • 1/2 cup (4 fl. oz_) mayo
  • Chopped parsley, to garnish
  • 1 cup (8 fl. oz) olive oil, for frying

Method:

Brava sauce:

In a saucepan, heat 3 tablespoons olive oil over medium heat. Add the onion and garlic and saute until the onion is soft. Turn off the heat, and add the paprika, Tabasco sauce, and thyme, stirring well. Transfer to a bowl and add the ketchup and mayonnaise. Season with salt and pepper to taste. Set aside.

Potatoes:

Boil the potatoes. Sprinkle the potatoes lightly with salt and black pepper. In a large skillet fry the potatoes in 1 cup (8 fl. oz) olive oil until cooked through and golden-brown, stirring occasionally. Drain the potatoes on paper towels, check the seasoning, add more salt if necessary, and set it aside.

Mix the potatoes with sauce before serving. Garnish with parsley and serve hot.

Golden fried Potato chips

Call us old-fashioned, but we want our chips fried. Not that we have anything against microwaved ones. We are favour of that too. But we are sure you will agree with the fact that fried chips are definitely tastier.

Ingredients:

Potatoes- 2 large ones
salt to sprinkle
pepper(optional)


Method:

  • Slice the potatoes (we used a mandoline here).
  • Soak the slices in salted water for say 10 mins
  • Dry the slices on a paper napkin.
  • Drop the slices in hot oil and fry them.
  • Sprinkle salt and pepper for taste.
  • Golden fried potato chips ready.
  • This will make a great tasty snack or a side for puliyodharai or lemon rice

Roasted garlic mashed potatoes



Ingredients:

Garlic - 1 head
Yukon gold potatoes -1 lb
olive oil - 1 tbsp
sour cream - 1/8 cup
butter - 2tbsp
milk if needed
salt
white pepper


Method:

Separate the garlic into cloves and add olive oil and wrap in an aluminium foil and bake for 45 mins at 350 F

Mash the garlic finely or if you are using a ricer rice the garlic along with the potatoes.

Boil potatoes with salt and then peel them.

Mash the potatoes and then add the other ingredients. Add milk if needed for consistency.

Herbed Potatoes


Ingredients:
Potatoes 4 Small
Fresh herb(dill/rosemary/basil) 1 Cup packed
Garlic 3 Cloves
Green Chiles 2 – 3
Turmeric Powder a pinch
Salt to taste
For seasoning:

Urad Dal 1/4 tsp
Cumin Seeds 1/4 tsp
Mustard Seeds 1/4 tsp
Broken Red Chiles 6
Asafoetida a pinch
Oil 2 tsps
Method:

Remove stems, wash and slice the green chiles.
Peel and lightly mash the garlic cloves.
Thoroughly wash herb in fresh water, remove any tough stalks and finely chop it.
Wash and halve the potatoes.
Bring to boil few cups of water in a sauce pot.
Add potato halves and cook till they turn soft but not mushy.
Strain the potatoes, peel and chop them into small cubes.
Heat oil in a pan, add all seasonings. Stir well to let herb stick to the potatoes and cook covered for few seconds.
Uncover, fry till potatoes start to brown a little and herb are cooked.
Finally season with salt and serve potatoes with herb with plain steamed rice.

Mathura Ke Dubkiwale Aloo (Potato Curry)

The city of Mathura, in Uttar Pradesh, the nucleus of Brajbhoomi, is located at a distance of 145 km south-east of Delhi and 58 km north-west of Agra. Mathura is widely known as birth place of lord Krishna.
Ingredients: ( Serves : 6)
  • 6 potatoes, boiled and peeled.
  • 3 green chillies, finely chopped.
  • 1/2 tsp dry ginger powder.
  • 1 tsp mango powder (amchur).
  • 1 tsp red chilli powder or to taste
  • 1 tsp turmeric powder
  • 2 tsps sugar
  • 1 tsp cumin seeds
  • 1/4 tsp asafoetida
  • 1 cup coriander leaves, chopped
  • Oil
  • Salt to taste.
Preperation :

  • Cut the boiled potatoes into cubes. Mash them slightly. Keep aside.
    Heat 4 tbsp. oil in a heavy pan and add asafoetida and cumin seeds. When they pop, add the mashed potatoes, turmeric, ginger, mango powder, sugar and salt.Add water to make into a thin gravy. Remove from the heat.

  • Heat 1 tbsp oil. When it is hot, pour it over the potatoes and immediately sprinkle with chilli powder and coriander leaves. Serve hot with pooris.

Potato Stew

Ingredients:
2 cups Coconut Milk
• 2 Potatoes (peeled and chopped into 1/2 inch cubes)
• 3-4 Green Chillies
• 4-5 Curry Leaves
• 1 tsp Ginger Paste
• 1/2 cup Thick Coconut Milk
• 1/2 tsp Pepper Powder
• Salt to taste
Method:
•Boil the potato cubes with thin coconut milk in a pan.
•Add ginger, curry leaves, salt and green chillies.
•Simmer on low flame till the potatoes become soft.
•Add powdered pepper to it.
•Cook until the gravy gets thickened.
•Now pour thick coconut milk and simmer for another 2 minutes.
•Potato stew is ready. Serve with chapattis.
