Vegetable Upma and thengai(coconut) chutney

This easy to make tiffin item is our all time favourite. This indeed goes very well with chai. I know but we like it that way. For the benefit of the readers, we stuck to coconut chutney.

Ingredients:

Rava - 1 cup
water - 2cups
salt
carrot
beans
peas


For tempering:

mustard seeds - 1tsp
urad dal -  1 tsp
curry leaves - handful

Method:

After the tempering of the said ingredients are done, Add the veggies and rava( dry roast rava separately before adding) and water and salt.
Upma is ready within minutes.

Donuts and a Swarovski Giveaway



Hi Readers,

We have always liked donuts(or doughnuts). Finally we managed to muster up enough guts to try it and say what, it came out really nice. Fluffy, soft and beautiful looking. No, we are not talking about a newborn, it is about a donut.




Ingredients:

flour - 2 cups
sugar - 3/4 cup
unsalted butter softened - 5 tbsp
egg yolks - 3 (added 2 whole eggs and still turned out fine)
yeast instant - 2 tsps
warm milk - 1 cup or little less

Method:

  • Add all the ingredients together. Sift the dry ingredients together to avoid lumps.
  • Kneed the dough for sometime and leave it aside in a greased bowl till it becomes twice in size.
  • After that punch out the excess air and roll them into 1/4 inch thickness. and using a cookie cutter and bottle cap(or anything), cut them in the shape of doughnuts.
  • Take the excess dough and repeat.
  • Let them rise again for another hour or two in a warm place. One hour is enough though.
  • Heat oil and fry the donuts on each side for a few minutes to make sure it cooks evenly.
  • Glaze with things you like - chocolate, or plain glaze or sprinkle plain cinnamon sugar.

Sourcream Pancakes



This recipe is adapted from Ina garten's recipes. The pancakes turned out fluffy and we could taste the lemon flavour which was refreshing.

Ingredients:

1 1/2 cups flour
3 tbsp sugar
2 tsp baking powder
1 1/2 tsp kosher salt or 1 tsp regular salt
1/2 cup sour cream
3/4 cup + 1 tbsp milk
2 large eggs
1 tsp pure vanilla extract
1 tsp grated lemon zest
unsalted butter

Method:

1. sift together the flour, sugar, baking powder and salt in a bowl.
2. on another bowl combine sour cream, milk, eggs, vanilla extract and lemon zest.
3. add the wet ingredients to the dry ones and mix only until combined.
4. melt a tablespoon of butter on a large skillet over medium low heat until it bubbles.
5. ladle the pancake batter into the skillet and cook for about 2 to 3 minutes or until bubbles appear on top and the bottom is nicely browned.
5. flip them over and cook for another minute or so until its browned.
6. serve warm with butter and maple syrup or strawberry syrup like we did.

Baked Eggs



This is an Ina Garten recipe. Made few changes to it though. Skipped a few ingredients n added a few. loved the result. This is a very easy to make recipe and makes a great breaker.

Ingredients:

  • 1/4 teaspoon minced fresh garlic
  • 1/4 teaspoon minced fresh thyme leaves
  • 1 tablespoon minced fresh parsley
  • 1 tablespoon freshly grated Parmesan
  • 6 extra-large eggs
  • 1 tablespoon unsalted butter
  • Kosher salt and freshly ground pepper
  • Tomatoes or sundried tomatoes - just a little



Method:

1. Preheat the oven for 5 minutes at 350F. Butter coat the ramekins.

2. Add all the herbs and spices.
3. Add the tomatoes.

5. Add an egg in each ramekin and season with salt and pepper. Sprinkle with parmesan.
6. Bake at 350F for 10- 15 mins. Keep the Ramekins in a water bath while baking just so that the eggs dont break.
7. Can be served with a side of Toast.

Sweet Potato Parathas




Hello,

We are posting the recipe of sweet potato parathas, which we tried last weekend. Though we did it for the first time, it came out well. It was quite different in taste. here is the recipe

Ingredients:

Wheat flour - 1 cup

oil- 1 teaspoon

salt to taste

Boiled sweet potatoes - 19big)

onion - 1(finely chopped)

Jeera powder- 1/4 tsp

Chilli powder-1/4 tsp

Turmeric powder- a pinch

Butter/ Ghee for cooking the parathas

Method:

1. Remove skin from the boiled sweet potato and mash it well.

2. In a mixing bowl , take the wheat flour, add little salt ,1 tsp oil and with required amount of water prepare the usual roti dough and allow it to rest for half an hour

3. Mean while, heat oil in a sauce pan, add finely chopped onion and fry till translucent, then add all the powders and little salt and mix well

4.Finally add the mashed sweet potato and mix well. do not cook for long(1-2 mins max). This will be the paratha filling

5. Take the prepared dough and make flatten it and keep little filling in it and seal all sides and roll the parathas. They needn't be thin

6. Using butter/ghee cook the parathas on both sides till golden brown.

7.Can be served with tomato sauce.

Crepes with strawberry and whipped cream

Crepes are great part of French cuisine. It is a street food in France. People have it on the go. They can be both sweet and savory. It all depends on the filling.


Ingredients:

1 ½ c. flour
1 Tbsp sugar
½ tsp baking powder
½ tsp salt
2 c. warm milk
2 eggs
½ tsp vanilla
2 Tbsp melted butter


Method:

Mix all ingredients together. Pour a small amount on a hot skillet and swirl it around to thin it out. Cook until nearly golden and then flip. Serve hot with strawberries and whipped cream. These crepes can be made savory too.

Blueberry muffins adapted from Paula Deen's recipe

Ingredients:

All purpose flour - 2 cups
baking powder - 2 tbsp
sugar - 1/2 cup
unsalted butter, melted - 1 stick
egg - 1 slightly beaten
whole milk - 3/4 cup
fresh blueberries - 1 1/2 cups
granulated white/brown sugar - 1/2 cup


Method:

Preheat the oven to 350 degrees F. Grease a 12-cup muffin tin.
In a bowl, combine the flour, baking powder and sugar. In another bowl, combine butter, egg, and milk and mix well. Pour the wet ingredients into the flour mixture and with a spatula, stir until just combined. Do not beat or over mix; it's okay if there are lumps in the batter. Gently fold the blueberries into the batter.
Spoon the batter into the muffin tray, filling each cup about 2/3 full. Bake for 10 minutes and remove from the oven. Sprinkle the tops of the muffins with the granulated brown or white sugar and return the muffins to the oven to bake for an additional 10 to 15 minutes, until the tops are golden brown and a toothpick inserted into the center of a muffin comes out clean. Cool for about 10 minutes in the pan before turning the muffins out.

Saboodana Ka Kichidi

Ingredients
Sabudana(sago) 500 g
oil 100ml
Potatoes 100 g
ground nuts 100g
green chillies 3-4
Coriander leaves few
Jeera 1 tsp
Curry leaves few
Salt and red chilli as per taste

Method:


  1. Soak sago in water for 10- 15 minutes

  2. Cut potatoes,chillies and coriander into pieces

  3. Remove the water from sago and keep it like that for 2 hours

  4. Heat oil in kadai and fry jeera, Put the potatoes, chillies,curry leaves, little salt and red chilli into it and fry on low flame.

  5. Meanwhile put some salt and red chilli into the sago and mix well

  6. Put the sago and lime juice into the kadai and cook till done

  7. Garnish with coriander leaves.

Pesarattu



Ingredients:

• 1 cup Moong Dal
• 1 Onion (finely chopped)
• 1/4 tsp Ginger( finely chopped)
• Coriander leaves (finely chopped)
• 1-2 Green Chillies
• Salt as per taste

Method:

• Soak the moong dal for about 4 hours in water taken in a bowl.
• Wash them and grind to make smooth paste along with the chillies and ginger.
• Add the chopped onions, chopped coriander leaves and salt to the above prepared paste.
• Heat a flat griddle on high flame.
• Pour the batter on it and spread the batter on the pan moving from center to the corners.
• Give it the shape of round pancake.
• Sprinkle little oil on its sides and cook it for 2-3 minutes.
• Turn over and cook again. Serve it hot with coconut chutney

Rice Puttu




Ingredients:

• 1/2 kg Rice

• Water to sprinkle

• 1/2 Grated coconut

• Salt to taste

How to make Rice Puttu:

• Soak rice in water for about 4 hours, drain and grind it to make powder.

• Cook the powder for about 5 minutes, while heating stir it.

• Let it cool. Combine salt with little water and sprinkle this to the powdered rice just to make the powder wet.

• Place a handful of grated coconut in the puttukutty (special utensil) and then put rice powder till half, now add another handful of grated coconut.

• Close the lid and steam Puttu for about 2 minutes.

Aval Dosai


Ingredients:
2 cups Raw rice
3 tbsps Urad dhal
1 tbsp Methi
1 cup Aval(Poha)
1/2 cup grated coconut
salt to taste
Method:
1. Soak rice , dhal, fenugreek in water for 3 hours
2. Wash aval(poha) and keep aside
3. Grind rice and dhal with coconut gratings. when half done , add aval and grind to a smooth paste
4. Add salt and keep covered overnight
5. Heat a dosa griddle and spread the batter and make soft and fluffy aval dosas. Serve hot with coconut chutney/tomato chutney.

Uttapam


Wondering what to do when your dosa batter goes sour. Dosas are not anymore fun with a strong smell. That is when uttapam helps you.

Add the ingredients below to your dosa batter.

Chopped onions
chopped tomatoes
coriander leaves
idly powder (optional)

Take a cup of the batter and pour it on the hot griddle and leave it to spread on its own just like it is done with european pancakes. After a few minutes flip the uttapam and leave it to cook for a few minutes. There your uttapam is ready.
Sprinkle idly powder on the top and your mouth will be too busy to speak.

Pongal


Ingredients:

Moong dal - 1/2 cup
Raw rice - 1 cup
cumin seeds - 1 tsp
peppercorns - 1 tsp
curry leaves
ginger pieces chopped
cashewnuts
ghee
salt

Method:

1. Pressure cook rice and dal with cumin seeds with 3 cups of water. Let it whistle twice,
2. Temper the peppercorns, curry leaves, cashews and ginger in ghee.
3. Add to the cooked mixture and mix well. Theres your pongal.
4. Dont forget the salt when you pressure cook them.
5. Goes great with coconut chutney and sambhar.
6. This is a great south indian breakfast.

Methi Puri

Ingredients:
• 4 cup Wheat Flour
• 300 gm Methi Leaves
• 1” piece Ginger
• 4 Green Chilies
• 1/2 tsp Cumin Seeds
• 8 -10 pods Garlic
• Oil for frying
• Salt to taste

Method:
•Prepare paste of methi, chilies, garlic, ginger and cumin seeds in a mixer.
•Knead the whole wheat flour with the above paste. Add salt and 4 tablespoon oil while kneading the dough.
•Heat the oil in a pan for frying.
•Make small balls out of the dough and roll them to make puris. Fry these puris one by one.
•Methi Ki Puri is ready to eat. Serve hot with pickle or aloo ki sabzi.

Basic Pancakes

These are very easy to make during the mornings, when all of us in the family are in a hurry. they are quite delicious too when served with melted butter and honey.

Ingredients:
2 cups all-purpose flour, stirred or sifted before measuring
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 egg, slightly beaten
1 1/2 cups milk
2 tablespoons melted butter
Method:
Sift together flour, baking powder, and salt.
In a separate bowl, combine egg and milk; add to flour mixture, stirring only until smooth.
Blend in melted butter. Cook on a hot, greased griddle, using about 1/4 cup of batter for each pancake.
Cook until brown on one side and around edge; turn and brown the other side.

Bread Uppma

Ingredients:
1. Bread slices - 10 (remove the edges)
2. Onion - 1 finely chopped
3. Green chillies - 2
4. Ginger - 1 inch piece
5. Turmeric powder - a pinch
6. Oil - 3 tsp
7. Salt - to taste
8. Mustard seeds - ½ tsp
9. Urad dal - ½ tsp
10. Channa dal - ½ tsp

Method:

Heat a pan with 3 tsp of oil.Then add mustard seed.
When they start to splutter add urad dal and channa dal.
Then add chopped onions.Fry till it becomes transparent.
Then add ginger and green chillies.Sauté for a min.
Then add salt and turmeric powder. Stir well.
Finally add the bread pieces and once again combine well.
Bread Uppma is ready. it is also the beast way to avoid wastage of bread.

Ragi Roti

Ingredients: • Ragi flour
• 4 Onions, finely chopped
• 1 Bunch coriander
• 1 Cup grated coconut
• Finely chopped green chilies
• Finely chopped curry leave
s • Salt to taste
• Little sugar

Method:

• Combine onions, coconut, curry leaves, coriander leaves, green chilies and salt with little water.
• Add ragi flour and some more water.
• Mix well and knead to make dough. Set the dough aside for some time.
• Apply little oil on a griddle.
• Roll out chapattis from small portions of the dough.
• Smear with oil and bake the roti at low heat till well done.
• Serve the ragi roti with pudina chutney.

Crunchy Egg Sandwich

Ingredients:
8 slices bread
2 eggs- hard boiled
1 heaped tbsp of softened, salted butter
1 cube cheese- grated
1/2 tsp pepper powder
1 small capsicum- deseeded and very finely chopped

Method:

  1. Mash the boilded eggs finely with a fork
  2. Add soft butter, cheese, seasoning and capsicum. Mix well to form a spread. add a little salt after tasting the spread.
  3. Spread this egg spread well on to aslice and top it with another slice. Cut into two triangles.
  4. Store them in damp cloth till serving . Cut sides and serve soft.
Note; this spread can be prepared well in advance.

Egg burjji

Ingredients:
• 6 Eggs
• 1/2 tsp Garam Masala
• 1/2 tsp Ginger Paste
• 1 tsp Red Chilli Powder
• 1/4 cup Frozen Green Peas
• 1 Onion (chopped)
• 2 Green Chillies (chopped)
• 1 Tomato (chopped)
• Fresh Coriander Leaves (chopped)
• 3 tbsp Vegetable oil
• Salt to taste

How to make Egg Bhurji:

• Beat eggs in a bowl; add salt and red chilli powder
. • Heat the oil in a non-stick pan.
• Add the green chillies, ginger paste and onions.
• Heat it until onions turn golden brown.
• Then add tomatoes and cook until tomatoes are soft.
• Add green peas and cook for another 3 minutes.
• Add beaten egg and mix well.
• Let the beaten eggs to set a little and then, turn it on the other side, breaking it into small pieces until cooked well.
• Splash garam masala powder.
• Garnish with chopped coriander/cilantro leaves.

Cheese Dosa



Ingredients:
• 50 gm Cheese (grated)
• 1 cup Urad Dal(soaked)
• 1 Onion (finely chopped)
• 2-1/2 cups Raw Rice (soaked)
• 3-4 Green Chilies(finely chopped)
• 1/2 tsp Salt
• Oil• Fresh Coriander Leaves(chopped)

How to make Cheese Dosa:

• Make a smooth paste of rice and dal soaked separately for 5-6 hrs.
• Mix salt to the paste and leave it covered for 8 hours.
• Grease a griddle lightly.
• Pour the batter on the griddle with a ladle and spread immediately with the help of ladle back.
• Sprinkle with oil on the sides and then cover it for few seconds.
• Remove the cover and add a tbsp of grated cheese, bits of green chilies, onion and chopped coriander.
• Fold over and put off the flame. .Cheese Dosa is ready. Happy break fasting
